Gastronomy

Arequipenian food has international reknown. It has a great variety that is the biggest variety compared to that of the other departments of Peru and it's well known for its good taste, the way it is seasoned and its red pepper; it's for that reason that the places in which it's sold are called " picanterias " (from the word picante meaning: too much hot ).

The diversity of the Arequipenian grastronomy shows in the fact that there are in it differetn soups fot each day , these soups are presented in the forms of the famous caldos or chupes.

Among these we can find the chupe of shrimps, the arequipenian ocopa, the stuffed rocoto, marinated pork, soltero de queso, pastel de papas, fried " costillar ", cuy ( guinea pig ) "chactado" ,cauchi de queso and the chaque ( special soup ). The Queso Helado is reccommanded like dessert and for drinking another choices for drinking are the famous Chicha de Jora, and also the beer and the anis of the region.
